Zucchini BreadMar 05 '00 Write an essay on this topic.Zucchini Bread ADD: 3 eggs, beat well 1 cup oil 2 1/2 cup sugar 1/2 cup chopped nuts* 1 teaspoon vanilla SIFT TOGETHER: 3 cups flour 1/4 teaspoon baking powder 1 1/4 teaspoon salt 2 cups unpeeled and grated zucchini (cut into chunks and put in blender to grate) 1 teaspoon baking soda 3 teaspoons cinnamon 1 teaspoon nutmeg Mix all together well. Grease and flour bread pans and bake for 1 hour at 325F. Makes 2 large or 3 small loaves. I also love to make muffins out of this recipe for a great small snack or to add a treat to any meal. Freezes well! * I prefer walnuts as the nut in this recipe! |
