Busy Day Tuna Casserole

My Busy Day Tuna Casserole is a recipe from years ago. It has been handed down through the mennonite generation. It hasn't been too long ago when women chose to wash all their clothes out by hand on a wash board. This casserole, along with fresh baked yeast bread baked the day before provided a good fast meal for the weary housewife. I hope you enjoy it!

BUSY DAY TUNA CASSEROLE

2 cans water packed tuna, drained
4 eggs
1/2 teaspoon salt
1 pound small curd creamed cottage cheese
1/2 cup chopped onion
1 medium tomato, thinly sliced
1/2 cup(4oz)shredded mozzarella cheese
2 packages(10oz each) thawed, drained broccoli

Beat eggs and buttermilk in large bowl. Add tuna, salt, cottage cheese, broccoli, and onion. Turn into large shallow baking dish. Bake 350F for 35 minutes. Top with sliced tomatoes and mozzarella cheese, bake 10 minutes, until its well set and golden brown.
This recipe makes 8-10 servings.
It is a good way to incorporate broccoli and tomatoes into a recipe for children!
