Fast, Easy and Yummy Southerwestern Chicken Appetizer!

Last Christmas I decided that I wanted my table to look fancy with a new appetizer that none of my friends had served. After looking through several cookbooks and magazines, I started walking through the grocery store and brainstorming with some ideas. Below is the appetizer that I came up with and it was a major hit at my party.

Mini Southwestern Chicken Tarts

Carving Board Southwestern Chicken (This is already cooked and ready to use.)
Frozen Mini Phyllo Shells (These are found in the frozen food section and are ready to use.)
Knorr Vegetable Soup Mix (Prepare this into the Veggie Dip that is shown on the box.)

First prepare the veggie dip according to the package directions. Once the dip is ready, place it into a ziploc bag. Snip a small piece off of the corner of the bag so that you can pipe the veggie dip into the phyllo shells. Once each of the shells has dip, cut the chicken into small bite size pieces and place on top of the veggie dip.

Put these on a serving tray and serve.

**NOTE: These should be made close to the beginning of the party, otherwise the tarts tend to get soggy on the bottom. I always try to make mine about an hour to two hours prior to the party.
