Quesadillas

Serve with salsa and a green salad. These can be made in advance and heated at serving time.

1 tablespoon butter or margarine
8 flour tortillas (7 inches each)
1 package (8 ounces) shredded Monterey Jack cheese
5 ounces sliced cooked ham, cut into thin julienne strips
1 can (4 ounces) green chilies, drained
1/4 cup sliced green onion
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
1/4 teaspoon red-pepper flakes
Medium -hot salsa (optional)

1. Preheat oven to hot (450*).

2. Cut 8 pieces of aluminum foil, each about 9 inches. Butter 7" circle in center of each piece of foil. Place 1 tortilla on each of 4 pieces of foil. Top each of these 4 tortillas with cheese, ham, green chilies, green onion, cumin, coriander and pepper flakes, dividing evenly. Top with remaining 4 tortillas. Place sheet of foil, buttered side-down, on top of each tortilla sandwich. Roll up edges of foil all around to seal. Place on large cookie sheet.

3. Bake in hot oven (450*) for 5 minutes until hot. Serve with salsa, if you wish.
