Hearty 3 Bean Chili

This recipe is a quick and hearty meal for fall or winter suppers. I use it when I arrive home late after a ball game and am in a hurry to make a quick a delicious dinner. You can choose to go vegetarian and skip the meat, you won't miss a thing.
3 BEAN CHILI
In large sauce-pan, saute in a small amount of olive oil:
1 small yellow onion, chopped
1/2 cup green bell pepper, chopped
1/2 cup red bell pepper, chopped
2 cloves garlic, minced
1/2 cup shredded carrot
Once these vegetables are just beginning to soften, add:
1 15.5 OZ. Can Pinquitos Beans (pink beans), drained
1 15.5 OZ. Can Pinto Beans, drained
1 15.5 OZ. Can Carribean-style Black Beans(or plain black beans)
Add the liquid from the can of black beans at this time, also. Reserve the other liquid to add if the chili seems "dry".
Stir, then add:
1 8 OZ. can tomato sauce
1 Tsp. Chili powder
1 Tsp. Cumin
Salt, pepper, Hot peppers, and cooked meat, to taste.
Heat thru until bubbly and serve with warm cornbread muffins made from your favorite mix.
