Wheat Pancakes~The Breakfast of My Champions

They are pancakes, and they are really really easy! What more can I say?

Whole wheat is the way I like them!

1/2 to 3/4 cup milk (I generally tend towards 3/4)
1 cup of flour total - 2/3 cup white -- self-rising, plus 1/3 cup whole wheat, if you want them wheat.
1 egg
2 tablespoons sugar
2 tablespoons butter


I gently melt the butter in the microwave, add milk, and the egg. Warm milk will decrease the lumps in the batter, but don't overmix it. Some lumps are okay! Lightly blend, and then add all of your dry ingredients at once. If you like, and don't mind dirtying an extra bowl =) you can hold the egg white back, and fluff it with your mixer. Adding it last will make for a lighter, fluffier pancake. Honestly, I did it this way in the beginning, but since I have not, I haven't really noticed that big of a difference in texture, and trust me, my boys haven't either!

I like to grease my pan with a little butter, for that crispy edge, but that is your choice. When the top has lots of little bubbles in the batter, simply flip. The second side cooks more quickly, and voila. homemade pancakes. After eating these, you will not be able to go back to the mixes. I just can't stand them, now! Mix pancakes are too thin, and flimsy for us now.

Another plus of this recipe is how versatile it is. Want blueberry pancakes? easy ... ! If using canned, just drain the fruit, and mix it in. Apple? Just peel an apple, slice it thin, and mix it in. Fresh fruit? After pouring them, and when bubbles have begun to form, just sprinkle 2 tablespoons of fruit on each one, then flip.

I have also added some frozen strawberries to the mix. I vary the amount of milk I will use, depending on how juicy they are.

The children love chocolate pancakes -- and we couldn't really taste it =). Just throw in a few tablespoons of sweetened drink mix. <read, quik here> =)

My favorite are pecan! I just put from 1/4 to 1/2 cup in a ziploc baggie and run them over with a rolling pin -- not too difficult, and as a bonus, a fun stress reliever! Of course, coarse pieces would be fine too!

What I like about these is how easy they are. If you like to plan ahead, they are even easier! I like to keep one made in the cupboard. I use an old spaghetti sauce jar, cleaned well of course, and put the flour and sugar together. Then just open, and dump! If you do this the first time you make it, it really saves time the next time you want them.
