Rice Bread

For yellow rice bread, add 1/2 tsp of turmeric. For green rice bread, add 1/4 cup cooked, chopped spinach. Makes 6 servings.

1/4 cup margarine
2 egg whites
1/2 cup milk
1 cup cooked rice
3/4 cup all-purpose flour
1 tsp baking powder

Preheat oven to 400 degrees. Melt the margarine in a 6-inch, nonstick pie pan. In a blender, blend the egg whites, milk, and rice for 30 seconds or until almost smooth. Add the flour and baking powder and continue to blend for 1 minute or until well mixed.

Pour the batter into the pie pan and bake for 30 minutes or until it turns golden brown. Remove the bread from the oven and let it cool for 5 minutes. Cut into wedges and serve warm with margarine or fruit preserves.
