Last year, my niece emailed me her recipe for English Muffin Bread to be made in the microwave oven. Well, I had never heard of English Muffin Bread nor had I heard of baking it in the microwave oven either. Since she is a very good cook, I trusted her judgement and I made the Bread myself. I was surely surprised at how quick and easy it was to bake. The family really enjoyed it. Just slice, spread with butter and jelly, cream cheese or any other topping you desire and enjoy.

Here's my recipe..

2 pkgs.active dry yeast
5 cups flour
1 Tbls. sugar
2 tsp. salt
1/4 tsp baking soda
1/2 cup water
2 cups milk
corn meal

First combine 3 cups flour, sugar, salt and soda.
Next, heat liquids until very warm (120-130 dgrs) NOT HOT, warm to the touch. Add yeast and let stand for 5 minutes till dissolved.
Next, add to dry mix and beat well. Stir in the remaining flour to make stiff batter.

Spoon into 2 loaf pans, (glass) which have been greased & sprinkled with corn meal. Sprinkle tops with corn meal.

Cover and let rise--about 45 minutes in a warm place.

Microwave each loaf on high power--6 minutes and 30 seconds. Bake separately.

Surface of loaf will be flat and pale. Allow to rest 5 minutes, then remove from pan.

Now, this recipe makes 2 loaves so you can share with your neighbors or friends or daughters. You will be surprised at how delicious this English Muffin Bread is. I hope you like it as well as my family does. Serve it often for breakfast or for snacks at bedtime.
