LEMON MOUSSE

When serving this elegant dessert, you can place a cookie, such as a vanilla or lemon wafer, or a sprig of mint atop each parfait. Using your imagination, there are many ways to fancy this one up. In any event, the taste is out of this world!

3 tbsp fresh lemon juice
2 tbs grated lemon rind, plus additional for garnish
1/4 cup confectioners' sugar, sifted
2 cups Cool Whip or whipped cream
2 egg whites, beaten stiff

Combine the lemon juice, rind, sugar, and whipped cream in a large bowl. Fold in the beaten egg whites until blended. Fill parfait glasses with the mousse and freeze. Keep frozen until ready to serve. Some additional lemon rind may be sprinkled on top for garnish. Makes 4 servings.
