Cookhouse Eggs

This is a great Egg Recipe that is Hearty Enough to be eaten as Breakfast or Dinner. It includes eggs, bacon & hash browns, all in one pan. I like to serve this as a Sunday brunch, when everyone sleeps in anyhow.
Ingredients: 6 Slices Bacon
4 Cups chopped cooked potatoes or Frozen Hash browns
1/2 tsp salt, a dash of pepper
1/2 tsp Garlic Powder
1/2 Cup Chopped Green Onion
4 Eggs
2 to 3 Tbsp Grated Parmesan Cheese
In a large fry pan, cook bacon until it's crispy. Remove, crumble,and set aside. Pour out all bacon fat from the pan into a cup. Take 2 Tbsp of the saved bacon fat, put it back into the pan. Now Spread potatoes and onions evenly in pan, sprinkle with salt, pepper and garlic powder. Cover and cook over medium heat for 10 minutes. Push potato and onion mixture to edges of pan. Add 1 more Tbsp of bacon fat plus the eggs to the center of the pan, cover and cook for 1 or 2 minutes. Remove cover, sprinkle crumbled bacon and cheese over all. Replace cover and cook and cook for another minute. Pan may be put under the broiler to finish cooking eggs, if desired. Makes 4 Hearty Servings and is a Meal In Itself.
