OK-so it's not "Kraft" or "Heinz", but if you like Indian food, adding the Sharwood brand name to your kitchen shelves is a great idea! Sharwood is a UK company which is a category leader in ethnic food manufacturing. They make a wide range of convenient Indian food products including chutney's and meat sauces, Indian bread mixes, rices, vegetables and spice mixes. My personal favorite and a staple in my kitchen, is Sharwood's Tandoori Mixture, an Indian barbecue spice for marinating.
I buy Sharwood products at my local (chain) grocery store in a Boston suburb, so I believe that it is widely distributed in groceries throughout the US. If you can't find it at your grocery, you can order it on the web from Bridgham and Cook, Ltd., at: www.britishgoods. com. They carry:
Sharwood's Tandoori Spices Mix $5.99
Sharwood's Madras Curry Powder $5.99
Sharwood's Chutneys: Major Grey, Bengal Hot, and Ginger $5.50
My favorite, Tandoori: this is a simple and traditional method of spicing and tenderizing foods before you roast or barbecue them. Since I live in New England (today's high temperature won't get above 15 degrees-and that doesn't include the wind chill!), I've experimented with baking different meats that I have marinated in the Tandoori style and this works well also. I have prepared chicken and pork Tandoori and they were great. I have also tried doing swordfish this way….and I wouldn't recommend it to anyone!
The Sharwood's products have recipes on the packaging that are easy to prepare and very reliable. The Sharwood's Tandoori Mix is a dry powder which includes the following recipe:
Tandoori Marinade: Blend together 4 heaped teaspoons of Sharwood's Tandoori Mix with 2 tablespoons each of plain yogurt, vinegar, lemon juice and oil.
Tandoori Chicken (serves 4):
The day before serving, make cuts into the flesh of 4 skinless chicken breasts. Pour 2 tablespoons of lemon juice over the chicken, rub in 1 teaspoon of salt. Coat with Tandoori Marinade (recipe above) rubbing well into the cuts Cover and let marinate overnight in the refrigerator. Turn from time to time the day of preparation (editorial: if you have the time!).
Before cooking, shake off excess marinade and broil or barbecue (or bake) for 10 to 12 m minutes on each side.
You can serve the Tandoori style meat that you have prepared with rice, a green salad, lemon wedges and sauteed spinach for an authentic Indian meal. If you really feel like "putting on a show", prepare a little raita to dip the meat into. This is shredded cucumber in plain yogurt. You can find the recipe on the web.
