My sister makes this about once a week and loves it.
Microwave Chocolate Cake
1-1/2 cups all-purpose flour
1 cup sugar
3 tablespoons baking cocoa
1 teaspoon baking soda
1/4 teaspoon salt
1 cup cold water
1/3 cup vegetable oil
1 tablespoon vinegar
1 teaspoon vanilla extract
Chocolate Sauce:
1 cup sugar
3 tablespoons cornstarch
2 tablespoons baking cocoa
1 cup boiling water
Dash salt
1 tablespoon butter or margarine
1 teaspoon vanilla extract
In a bowl,combine the first five ingredients.Stir in water,oil,vinegar and vanilla until well blended.Pour into an ungreased 8-inch square microwave-safe dish.Microwave on high for 6-8 minutes,turning dish every 2 minutes,or until a toothpick inserted near the center comes out clean.
In a 1-qt.microwave-safe bowl,combine sugar,cornstarch and cocoa.Stir in water and salt.Microwave on high for 2-3 minutes,stirring occasionally,or until mixture boils.Microwave 1 minute more.Stir in butter and vanilla.Spoon over pieces of warm cake.Makes 9 servings.
