BEEF HASH Made The Old Way

Beef Hash the old way before the days of the can.Of course this recipe is old from the early 1950`s I`am sure that if you try it once you will make it again and again. Its a great way to use up left over roast beef. Just add a salad and some rolls and you got a great meal.

Beef Hash
1 cup beef broth or bouillon cube in
1 cup water
2 cups grated raw potato
1 medium onion, grated
2 1/2 cups diced cooked beef
1 teaspoon salt
2 tablespoons bacon fat

Combine broth,potato,onion,beef and salt, and put
hot fat in heavy skillet. Cover and simmer 25 to 30 minutes or
until potato and onion are well cooked and hash is slightly browned
on the under side. Add more water if hash becomes dry. Uncover skillet and place in moderate oven (350 degrees)15 to 20 minutes longer. Remove from oven
and fold hash over omelet-fashion. Place on hot platter, using a wide spatula or
turner. 5 servings
