Remodeling Spanish Rice Special

As I've mentioned in other reviews, we are in the middle of remodeling our kitchen. Cooking for a big family is challenging enough; cooking for a big family with no stove or oven is nearly impossible.

Here's a recipe that I've arrived at that works well, provides all the basic elements of a meal and is quick and easy:

1 lb of cooked fajita chicken strips
1 cup of salsa
1 can of mexican flavored stewed tomatoes
1 cup of corn
1.5 cup of rice
1.5 cup of water
1 can or chopped black olives
1/2 cup of chopped green onions
salt pepper flavorings

NOTE: You may need to adjust the rice to water ratio depending on the cooking directions for the rice. I guestimate this by subtracting the estimated liquid in the salsa and tomatoes from the water needed to cook the rice. Better to be on the safe side a use a little less water.

Place all but chicken, olives and green onions in a large electric skillet. Cover and cook until rice is nearly done. Stir in remaining ingredients and flatten back down. Cover and cook til rice is fully cooked and chicken is heated. Add water if necessary.

Serve with salsa, sour cream, grated cheese. Try wrapping the rice and garnishes in a heated flour tortilla. This meal is attractive (red, green, yellow, white and black all just make it look yummy) and is basically effortless and fool proof.
