Grandma's Holiday Oyster Dressing.

This is a wonderful old-time, coastal, holiday recipe passed on to me by my grandmother Anna White. It's not so common these days and makes a wonderful side dish for any holiday meal...particularly beef or fowl! Be careful though, my dad and grandfather used to sneak a few oysters during the preparation! The oysters can usually be purchased in the seafood or fresh meat section of major grocery stores.
1/4 cup melted butter
2 tbl chopped onions
3 cups crustless bread pieces (cut or torn small)
1/4 cup chopped celery
1/2 tsp salt
1/2 tsp paprika
2 eggs
6 tbl melted butter
chicken or beef stock to moisten
1 can chilled, shucked, fresh oysters
(if available) chopped, boiled chicken giblets
Saute onions in 1/4 cup butter for about 2 minutes. Combine with the remaining ingredients. Point into a buttered glass baking dish. Bake at 350 degrees for 45-55 minutes. When fully cooked, bread will be cooked through but not dry. Oysters will be firm but not rubbery.
