Dark Chocolate Zucchini Cake

Tomorrow is a Family Reunion on my Moms side, I've had months to decide what dishes to take along to share, but being a last minute person had no ideal what to take until I took a look at my garden. So many Pickles and tons of Zucchini. So I checked the pantry found a dark chocolate cake mix, nuts, raisins, chocolate chips. That's what I used to come up with this cake. I used a tin foil cake pan, so that I didn't need to drag dirty pan home. There was a little to much batter for the pan, I put it in a tiny loaf pan, which worked great gave me a nice sample to try before taking cake to the Reunion.
Dark Chocolate Zucchini Cake
1 box dark chocolate cake mix
1/2 cup oil
4 eggs
1 teaspoon vanilla
1 medium size zucchini (2 cups grated)
1 cup chocolate chips
1/2 cup chopped nuts (I used pecans)
1/2 cup white raisins
In large mixing bowl add cake mix, eggs oil, and vanilla beat till well blended. Stir in the chopped nuts, grated zucchini, chocolate chips, and raisins.
Grease a standard size cake pan, pour in batter.
Bake in 350 degree oven 30 to 40 minutes (mine took 30 minutes)
Let cake cool and frost, I made a cream cheese frosting from scratch as follows below.
Cream Cheese Frosting
1 package cream cheese 8 ounce size
3 1/2 cups powdered sugar
3 tablespoons butter (softened)
1 teaspoon vanilla
2 tablespoons milk
In large mixing bowl Soften cream cheese in microwave 20 to 30 seconds,add powder sugar,butter,milk and ,vanilla,and beat till creamy.
If to thin add a little more powdered sugar,if to thick add a drop more of milk.
Spread on cooled cake and enjoy.
