Halloween Sweets

I may indeed be thinking about the holidays too early, but we ALL know how fast the days fly by once September approaches and school starts. Halloween draws near and sooner than you know it, it’s already Christmas.
For every holiday I like to give my co-workers a “little something”. Because I work with a large number of people, whatever I give out needs to be inexpensive. I have learned that baked goods can put many smiles on peoples faces (and stomachs), and best of all it’s inexpensive. At my work food and sweets are a “now you see it, now you don’t” kind of situation! I’m sure many of you can relate.
For Halloween I will be making homemade sweets and putting them in decorative Halloweens bags tied with black and orange ribbons. The following are a couple of my favorite recipes that I will include. They have always been hits with friends and relatives. I have used these recipes that were given to me by my Godmother many times, and the end result is ……..WELL TRY THEM, you will love them.
HALLOWEEN COOKIES
This makes about 4 dozen
You will need:
2 cups sugar
1 ½ cups shortening
2 eggs
½ cup molasses
4 cups flour
2 teaspoons cloves
4 teaspoons baking soda
2 teaspoons cinnamon
2 teaspoons ginger
1 teaspoon salt
Decorator Icing:
1 (pound) box powdered sugar
¾ cup shortening or margarine
¼ cup milk
1 teaspoon vanilla flavoring
small amount of orange paste coloring
Cream sugar and shortening. Add the eggs and beat well. Mix in the remaining ingredients. Roll the dough into small balls (the size of walnuts). Roll each cookie in granulated sugar. Place the cookies two inches apart on a greased cookie sheet. Press each cookie ¼ inch thick (use a glass for this). Bake at 350 degrees for 6 to 8 minutes. (Make sure you do not over bake). Let cool. Then decorate each cookie with orange tined icing. You can also use raisins and candy corn for a nice touch.
For the icing: Beat all ingredients for 10 minutes with an electric mixer.
PUMPKIN COOKIES
This makes about 4 dozen
You will need:
1 cup vegetable shortening
1 cup sugar
1 cup pumpkin
1 egg
1 teaspoon vanilla
2 cups flour
½ teaspoon salt
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground allspice
½ cup chopped nuts
Preheat your oven to 350 degrees. Cream the shortening and sugar well. Add pumpkin, egg, vanilla; mix well. Stir in remaining ingredients. Drop rounded teaspoonfuls 2 inches apart on a greased cookie sheet. Sprinkle with a mixture of cinnamon and sugar. Bake for 12 to 15 minutes. Let it cook on wire rack. Store in a covered container to keep them soft.
