Zesty Trout
This is actually my brother's recipe.. he's quite the fisherman -and- and excellent chef. I'm not a big fish-eater but this stuff is soooo good.
You need trout, whatever you catch (or I suppose you could buy it) that day, we usually use enough to feed four or five people, but it's not how much fish you use, it's all in the dressing. Honest. Oh, and Atlantic Salmon will work as well. The thing with the trout though, it has to be pink meat. If it's not it just won't hold together or grill properly and just makes a big mess.
Ingredients:
One quarter cup french salad dressing
One tablespoon lemon juice
Two teaspoons salt
Two tablespoons chopped onion
Mix into a sauce.
Skin the trout and smear mixture on it, marinate for 5 - 10 minutes and then BBQ (close to coals) on each side, or until golden brown.
Eat, enjoy, watch for bones!
