Keep it Simple

I admit when I was single I didn't realize I needed more than one good knife. That was until my friends bought me my first cutlery set. Now I 've realized after years of experience there are certain things you look for in a set. The first thing I realized was name brand doesn't always mean the best bargain for you. If you're not a galloping gourmet you don't need to spend big bucks for a knife set. Honestly, who really needs knives that cut through nails or can cut vegetables into fanciful birds or people etc.
A knife set should possess these basic qualities to reside in my kitchen.
1. Have a butcher block stand included. Why? So I don't slice myself trying to get them out of a cluttered kitchen drawer. Also, I've noticed they stay sharper longer.( Don't take my word for it, but maybe scraping against the wood helps keep its sharpness.)
2. Have a simple variety of knives. Each knife has a specific job for a reason.You wouldn't use a butcher knife to cut a simple steak. Have you ever tried to cut a turnip bottom with a little steak knife. Impossible. Good variety, but remember you're kitchen doesn't belong to Julia Childs.
Basically, if you need the more expensive knives because you Do cook like an international chef then buy it. In the mean time this mother of three will stick with a set that I don't have to finance.
