Creamy Asparagus Soup

This is a quick and easy recipe to prepare. This is one of my families favorite dishes. Creamy Asparagus Soup served with fresh homebaked bread makes a filling meal. This soup is delicious!

For this recipe you need:

1 pound of asparagus, cut into 2 inch lengths
2 tablespoons of butter
2 tablespoons of flour
2 16 ounce cans of Chicken Broth--I use Campbell's Healthy Request
1/2 cup of Milk
Salt to taste
Pepper to taste
1 Tablespoon of garlic powder
1 heaping Tablespoon of dried onions

Place the cut asparagus into a large pot, add the Chicken Broth, butter, and flour. Stir. Add the salt, pepper, garlic powder and onions to the pot and mix well. Cook on high until asparagus is tender about 30 minutes. Place soup mixture in a blender, and add the milk. Puree. Pour soup back into the pot and simmer for an additional 15 minutes.

Serves 4.
