Quick Shortcut Risotto

I tried this recipe and can be made in less than 30 minutes. Three ways to make:

1) 1 tablespoon margarine or butter

1 cup regular long-grain rice, uncooked

1 can chopped onions

1 can (10 1/2 oz) Campbell's condensed Chicken Broth

1 soup can water

3 tablespoons grated Parmesan Cheese

1. Take a 2 qt. saucepan over medium-high heat, in hot margarine, cook rice and onion 5 minutes or until rice is browned and onion is tender, stirring constantly.

2. Slowly stir in broth and water. Heat to boiling. Reduce heat to low. Cover; cook 20 minutes or until rice is tender and liquid is absorbed.

3.Removed from heat. Stir in Parmesan cheese. Garnish with green onion curls and lemon wedges, if desired.

risotto:

Risotto with Peas: Prepare the above, except substitute 1/2 cup slice green onions for chopped onion. In Step 2, add 1 cup frozen peas during last five minutes of cooking. Garnish with quartered lemon slices, if you like. Makes about 4 cups.

Risotto Verde: This is made the same as above, except substitute 1/2 cup green onion for chopped onion. In step 1, cook 1/4 cup chopped celery with the green onion. In step 2, add 2 cups chopped fresh spinach with the broth. Garnish with lemon peel curls, if you like.

makes again about 4 cups or about: 6 servings
