BEWARE! IF YOU'RE ON A DIET... DON'T READ THIS

I'm not lying with the title. This is one of the favorite dishes with my friends and family that I make and I'm telling you, one could probably gain 30lbs just reading this. :-P
This is a recipe that was taught to me by an ex-boyfriends mother from my teen years. I have to admit this was the only positive thing I came away with in that relationship! hehee
Ok, enough with my heartache, on with the mouth watering calories. This recipe is not a quick one but I will guarantee it will go fast. ( wish I could have said the same about my ex ) lol
POTATOES ROMANOFF
1. 6 large potatoes - with skins
2. 2 16oz tubs of sour cream (told you this wasn't good for a diet)
3. 3 green onions finely chopped
4. 1 clove of garlic finely chopped ( optional )
5. 1 med package of sharp cheddar cheese (sorry but I never did pay attention to the size)
6. salt, pepper, and Lawry's seasoning salt to taste
Take a large pot and fill with water.
Place un-peeled potatoes in the water and bring to a boil. It is important to keep a close eye on the potatoes because you do not want to cook them fully. The potatoes will be properly done if you can press a fork into them with a little resistance. Once potatoes are half cooked, drain and place in the fridge until they are completely cooled.
While waiting for the potatoes to cool, grate your package of cheddar cheese and finely chop your onions and garlic.
Once potatoes have completely cooled, peel the skin off the grate the potatoes as you would for hash browns. You my use frozen hash browns as a substitute but trust me, it may be faster but won't taste the same.
Preheat your oven to 350F.
Grab a very large bowl, the largest you have and get the sour cream ready because it's time to combine. ( no poetry intended )
Now place your grated potatoes in the large bowl and add the green onion, cheddar cheese and a small amount of salt, pepper and seasoning salt. Mix well until the ingredients have combined evenly. Now mix in your sour cream.
Once you have mixed all ingredients, take a non-stick backing pan, and even though it's non stick, line it with a small amount of butter or margarine. If you do not have a lid for that particular pan, cover with tin foil.
Now place the potato mixture in the pan and place in your preheated oven for approximately 35-40 mins. You want to keep a close eye on the potatoes while cooking.
Just take out of your oven, cool and serve. ( duh ) hahhaha
This recipe will melt in your mouth. It seems to go best with beef or chicken entree's.
