AmerAsia Fried Rice

Having spent numerous years in Asia I have developed an affinity for foods from that region, especially the rice. When using this recipe it is important to use Thai Jasmine (Fragrant) Rice. You can find rice like this at any Asian food store and many times even at your local grocery store. Another unique aspect of this fried rice is that I like to use nuts to bring out the flavor of the vegetables...see what you think...

To cook rice simply rinse the rice until the water is relatively clear. Level the rice in the pan and place your middle finger on top of the rice without causing an indentation. Fill the pot with water up to the first knuckle of your middle finger. Place pot on stove at high. Bring to a boil and stir rice to reduce clumping. Cover the pot and reduce heat to low. Simmer for 15 minutes and remove from heat. Let the rice sit for about five minutes and then it's ready to eat, or in this case be refrigerated.

Ingredients:
1 Cup Chopped Pecans
2 Tbsp Minced garlic
1 Tbsp Minced ginger
1/4 Cup Minced scallions (white part only)
1/2 Tbsp Pecan scented oil
1 Tbsp Vegetable oil
6-8 oz. Diced meat (your choice)
1 Cup Diced vegetables (your choice)
3 Tbsp Dark Soy Sauce
2 Tbsp Oyster Sauce
1/4 Cup Chicken Stock
2 Cups Cold, cooked jasmine rice
TT Salt/Pepper

Directions:
1) Add pecan scented oil to a wok, add pecans and kosher salt and fresh cracked pepper and saute until the nuts are browned and crispy.
2) Remove nuts from wok, leaving oil.
3) Add vegetable oil, garlic, ginger and scallions and saute until the aromas permeate the air.
4) Add the meat and cook on high until done.
5) Remove the meat, reserving oil and liquids.
6) Add the vegetables and cook on high until desired texture is reached.
7) Deglaze the wok by adding soy sauce, oyster sauce and chicken stock.
8) Ensure the wok is very hot then add the rice, stirring constantly to keep it from clumping.
9) Add the meat back into the wok and cook on high until the moisture content is at your desired level.
10) Just before serving add the toasted/sauteed pecans.
