Pancit Guisado

Pancit is a dish made from the clear noodles you can find in oriental groceries or in larger grocery stores. It's a dish of meat, vegetables and noodles tossed together that is just delicious. I believe it is from the Philipines, but I could be wrong about that. This recipe is one from a friend from the Philipines with some adjustments from me to leave out things I don't like. ( Sorry about that.)

PANCIT GUISADO

1/2 cup boiled chicken, cut into pieces
1/2 cup cooked ham, sliced in long, narrow strips (optional)
1/2 cup french cut green beans, fresh
1/2 cup carrot sliced in long, thin strips
1 Package rice noodles
4 cloves of garlic, minced
1 onion, thinly sliced
1 1/2 Tbsp. soy sauce
Salt to taste
Pepper
2 Tbsp. cooking oil

Put the 2 tablespoons of cooking oil in a frying pan. When the oil is heated, saute the garlic and onion. When the onion is translucent, add the chicken and ham, soy sauce, pepper and salt. Simmer for about 15 minutes, stirring occasionally. Then add the beans and carrots, and cook for 25 minutes or until the beans are done. Let the mixture simmer until almost all of the liquid is gone. Set aside one half of the mixture.

Blanch the noodles in boiling water for 2 minutes. Drain the noodles and add them to the mixture. Arrange the noodle and vegetable mixture on a large platter and then add the remaining vegetables on top.

Serve immediately.

( I havn't tried this but I think that a couple of packages of Ramen noodles would work as an emergency substitute for the rice noodles.)
