A Light Lunch...May 29 '00 Write an essay on this topic.After moving away from home for college, I realized I had one major hurdle to overcome. I had no idea how to cook. Well actually, I could make the basics, an egg, macaroni and cheese, and of course...tv dinners =). Facing a dilemma, and starvation, I got creative. I have to admit, this recipe is incredibly simple, but if you're in a time crunch and need something to make your tummy stop growling...this is for you. One small can of Campbell's soup...(California Vegetable is what I use) One cup of white minute rice 3/4 cup of water Mix the ingredients in a microwave safe container and warm for 5 minutes on high. Stir and serve. You may want to add a bit of salt and pepper to bring out the flavor. Provides 2-3 servings. Throughout the years, I've done variations...tried different soups, added chicken chunks to the mixture, and every time...it pleased the taste buds. Again, it's incredibly simple and probably works best for a light lunch or a late dinner. Hope you enjoy. |
