A little over a year ago, we had the pleasure of having our now 17 year old move into and share our home with us. What a sweetie, we love her so much and loved getting to know her more. She shared many things with us, and was more than willing (at the time-lol!) to help in the kitchen!
One day she asked if she could make Peanut Butter Fudge with the other kids. I, being the kitchen queen and a stickler of made-from-scratch baked goods, wasn't overjoyed at the thought of all the ingredients, time and mess that comes along with homemade fudge. I would avoid it every chance I could. Finally, there was no escape and when we were at the store, she asked if she could please get the ingredients for the fudge this time. Giving in, I agreed. I secretly calculated the extra cost of the ingredients and inwardly groaned.
She returned with a jar of store brand peanut butter and a can of vanilla icing.
"What are those for?" I asked incredulously...
"Fudge!" she said proudly...
"Oh honey, that is NOT how you make fudge."
"Just wait...you'll see!"
">sigh!<"
So, we arrive home, she haphazardly helped put things away in order to get to the fudge making. In ten minutes time, she had a 9x9 pan of peanut butter fudge cooling in the fridge.
I had to admit, it sure smelled good....
And it tasted even better. I almost felt foolish for going to such lengthy extremes to make traditional peanut butter fudge. Here's what that child did...
All you need is...
1-15 ounce jar peanut butter (crunchy or creamy)
1 can vanilla frosting
* Put both in a medium saucepan and bring to a rolling boil. Boil for five minutes, stirring constantly. Pour into a buttered 9x9 inch pan. Keep refrigerated.
Yep, believe it or not, that is it! It produces delicious, flavorful fudge. I do recommend that it is kept refrigerated, it tends to become softer than traditional fudge otherwise, but not by much!
We have also used chocolate icing, we've also marbled the two. Its just as good and pretty! You may add nuts or coconut, sprinkles or shaved chocolate on top...your imagination is the limit!
My kiddo taught me a lesson in cooking! She was so proud and we shared it with our entire church! They love and use the recipe too! Its a great one to use with young, beginner chefs also. Providing, of course, there is supervision with the hot fudge!
