Eggplant Casserole

My wonderful sister and I invented this several hundred years ago, back when we were both young and beautiful (well, she was anyway. Ooops,IS! IS! Don't look at me that way, Sis!) and before we needed to worry about cholesterol and fat calories.

Make alternating layers in a heatproof casserole the following: one medium peeled sliced eggplant which has been lightly sauteed in a combination of olive oil and butter; one medium onion, prepared like the eggplant; one large sliced zucchini; 1 pint of sour cream; 1 small can of tomato sauce; grated Romano cheese; grated parmesan cheese; shredded longhorn cheese (uses about 2 cups). Bake at 350 degrees for 45 minutes. You can easily see why this is Heart Attack Casserole, but if you are very very good and exercise daily and take lots of vitamins, it probably won't kill you right off. Serve this neat meatless meal with a green salad and fresh bread, and maybe a white wine. Make sure you store leftovers in the fridge.
