Spicy Tomato SoupOct 04 '00 Write an essay on this topic.Ok..I had an over abundance of fresh tomatoes that a friend had given me and decided to make tomato soup. Ingredients: 1 red or green bell pepper (peeled) 1 small to medium onion (diced) 1 quart chicken stock or for vegetarians use vegetable stock 1 can ro-tel tomatoes and chiles 6 small to medium tomatoes (peeled) 1 1/2 teaspoons white sugar 2 teaspoons hot sauce of your choice salt and fresh ground pepper to taste I used one package of saffaron rice to make it interesting, this is totally optional but it was very good. First you need to peel the tomatoes and the peppers. To peel bring water to boil in large stock pot. Make a small "X" on the bottom of the tomato, this will make peeling a lot easier. When water has reached a full boil gently drop the tomatoes and pepper into the pot. Let boil for just a couple of minutes. When you notice the skin starting to peel from the "X" it is time to drain them. You will drain the tomatoes and pepper and quickly place in a large bowl full of cold water and ice. This is called an ice bath. After they are cool enough to handle peel the skins off. You can either chop these by hand or place into a food processor. After chopped return to large pot and warm on low heat. To this pot you will want to add all the remaining ingredients, except for onion and rice. Dice onion and sautee over medium heat with a touch of olive oil. Add garlic or any spices that you like to sautee pan. When the onions are soft add to pot with other ingredients. Bring this mixture to a boil, add rice if you have chosen to add this. Cover and reduce heat for 10-15 minutes. If you are using rice be sure to read cooking instructions on label for simmer time. If the soup is not at desired consistency you can thicken it with corn starch. After the simmering process. After it simmers it is ready to eat! I topped my soup with a spoonful of sour cream and garnished with fresh diced tomato. This makes and hearty meal when combined with a grilled cheese sandwich. It was a big hit at my house.
