Old Fashioned Potato Salad

This potato salad is the good yellow one, with that tangy, creamy flavor you remember from when you were a kid. The ingredients are approximate, you will just have to taste as you go. You'll know when you get there.

Peel 5 or 6 big potatoes, and cut them into cubes. Bring a big pot of water to a boil, carefully slide the potatoes into the water (don't splash yourself!) and drop in a couple of eggs, so they can boil, too. While these things are happily rolling around in the water get out a big bowl. No, not that one, a BIG bowl. Now scoop a couple of BIG spoonfuls of Miracle Whip into the bowl and add some long squirts of mustard from the plastic mustard squirter. Don't get funny on me and use Honey Dijon or some dumb thing, just plain old yellow hot dog mustard is what we want here. Stir it all together until it looks pale yellow, then scoop in a spoonful of sweet pickle relish. Now chop half a large onion and a couple stalks of celery and add them. Go check the potatoes. Are they done? Drain and add them, reserving the eggs for a few minutes. When everything is all stirred together, go back to the eggs. Run them under cold water until you can peel them, chunk them up and stir them in, too. Now salt the whole thing and put it in the fridge for an hour or so, if you can stand to wait while the flavors "marry." When the flavors are so married they're sitting around in curlers and bathrobes, get a plate and a fork and dig in. This is gonna be even more delicious tomorrow, if you can believe it.
