Thanksgiving Tradition A sweet potato souffle`Oct 04 '00 Write an essay on this topic.Every year at Thanksgiving my Mom has always prepared a Sweet Potato casserole. This year I am preparing our Family Tradition for my family including my In-Laws. Being in the military since we were married, all our Holidays were spent away from my Husbands Family so this is a Special occasion for me. Frantically, I have searching for new ways to prepare this meal to make a good impression. I had found this recipe recently in a magazine and tried it out and had much success with it. I added the pecans for a little added touch so they are optional in this recipe. Pre-Heat oven to 350. Ingredients Needed: 2 cups mashed Sweet Potato (2 large cans of yams drained is what I used) ¾ cup granulated Sugar 4 egg whites ¼ cup 2% milk 2 teaspoons cornstarch ¼ teaspoon cinnamon ¼ teaspoon vanilla extract Cooking Spray Topping ½ cup brown sugar 4 tablespoon margarine 3 tablespoons of flour 8 ounce can crushed pineapples (drained) 1/4 cup of chopped Pecans (optional) Spray the soufflé` or casserole dish with Non stick cooking spray. My preference is Bakers Joy. In a large mixing bowl mix the sweet potato and sugar together using the lowest setting on your electric mixer. As you are beating together the potatoes and sugar, add the egg whites, milk, cornstarch, cinnamon and vanilla extract. Beat until lumps disappear. Pour into your baking dish. Melt butter and brown sugar in the microwave for about 30 seconds then stir in flour and can of pineapples. Drizzle over sweet potato bake top with chopped pecans at 350 for 30 to 35 minutes. A tasty side dish, for that Traditional Holiday. You can use either individual souffle` dishes which is what I plan to do for more of a personal touch to my dinner or bake in a 2 quart casserole dish uncovered. Baking time will vary when using individual dishes check souffle` after 30 minutes when it is bubbly and golden brown it is done. This recipe yields 8 servings.  |
