Tune 'Pate' (a dip really)

This is a nice easy recipe if you are expecting company. It's always nice to have something to snack on. It does take a lot of mixing, so a stand mixer is a definite plus with this recipe. I usually make this ahead of time and put it in the refrigerator overnight and it thickens up a bit.

Ingredients:

6 ounces Cream cheese, softened
2 hard boiled eggs
12 ounces of Tuna Fish (preferably the solid white)
freshly ground black pepper

With mixer, puree softened cream cheese and hard boiled eggs. Add tuna and pepper (to taste) and blend until smooth. That's it, very simple. This dip goes very nicely with a Club cracker.

Optional: This recipe may also be made adding one or both of the following optional ingredients: 3-4 Tablespoons Cognac, and/or 12 Italian or Greek black olives (pitted).
