Fried Apples 'N Onions

Sounds gross ! That's what I thought when I first heard about frying apples and onions together ! A friend of mine who teaches 2nd grade shared this recipe with me. She was reading one of the "Little House on the Prairie" books by Laura Ingalls Wilder in her class. She said this is a food that is mentioned in the book and so she came up with a recipe to make this with her class. I've made it since several times and it is delicious !

Ingredients:

1/2 lb. bacon
6 small yellow onions
6 tart apples
2 tbsp. brown sugar

Directions:

First fry the bacon and set it aside. Then peel the onions. Next, cut the apples crosswise in circles about 1/4 inch thick. Then, drain all but 1 tbsp. of fat from the skillet in which you fried the bacon. After you have removed the bacon and additional grease, cook the onion slices for three minutes. Then cover the onion slices with apple slices in an even layer. Sprinkle with brown sugar all over. Cover the skillet and cook until apples are tender and sugar has melted. Serve the fried apples and onions with the bacon on the side.
