Quick and Easy Mexican Chicken

This is a recipe I got from my next-door neighbor. She got it from a friend of hers. It is a super quick and easy recipe and I love it, as does my family. In fact, all the friends I’ve shared it with have loved it too. It also makes for an easy pot-luck dinner dish.

2 T. butter/margarine
2 T. flour
1 ½ c. milk
12 oz. Velveeta
1 c. salsa
1 lb. Skinless/boneless chicken – cut into small pieces*
8 oz. Doritos – crushed
1 c. shredded cheese

Brown chicken in oil or non-stick spray. Remove from heat. In saucepan, melt butter over low heat. Mix in flour to make a paste. Cook until bubbly. Add milk and cook over medium heat till mixture thickens (stirring constantly). Add Velveeta and salsa. Stir until smooth. Remove from heat. Add cooked chicken.

Place ½ crushed Doritos in the bottom of a casserole dish. Spoon/pour chicken mixture on top. Top with remaining Doritos and shredded cheese.

Bake at 350 for 30 min.

* I have made this recipe using canned white-meat chicken and it comes out excellent. In fact, I prefer the canned chicken to the cut-up chicken breasts, which tend to dry out when browned.
