The Best, Soft Oatmeal Cookies

These are the Best Oatmeal Cookies I have ever had!
The secret is cooking the raisins to plump them,
and adding the raisin liquid to the batter. This makes it
a fluffy, soft cookie rather than crunchy and dry like most.
These make excellent gifts at the holidays, or anytime.
You can also mold them, dip them in chocolate, or add nuts
to change the flavor a bit.
The Best, Soft Oatmeal Cookies
1 cup shortening
1 cup sugar
2 eggs, beaten
1 cup raisins
2 cups flour
1/2 tsp. EACH soda, salt
1 tsp. Cinnamon
1/4 tsp. nutmeg
2 cups rolled oats
Cream shortening and sugar in large bowl. Add eggs, mix well.
Cook raisins in water to cover. Drain, reserve 6 tbsp. Liquid. Stir next 5 ingredients together. Add alternately to creamed mixture, with raisin liquid. Stir in oats and raisins. Drop by teaspoonfuls onto cookie sheet. Bake @ 375 for 6 to 7 minutes. Do not overbake. Cool on rack. Store in cookie jar.
