Stir-Fried Crunchy ChickenJun 19 '00 Write an essay on this topic.This is a bit different than most stir fry recipes I've seen, as it includes asparagus! It is truly an awesome meal. Serve with white rice. Stir-Fried Crunchy Chicken 1 cup white wine vinegar 1/2 cup honey 1/4 cup soy sauce 2 garlic cloves, minced 2 tsp. minced ginger 1/2 tsp. crushed dried red chili pepper 1 lb. chicken breast, cut into strips 2 cups 2" asparagus pieces 1 cup thickly sliced mushrooms 1 cup chicken broth 8 scallions, green parts only, quartered lengthwise. 1. In a large skillet or wok, over medium-high heat, combine the vinegar, honey, soy sauce, garlic, ginger, and chili pepper. Bring to a boil and cook, stirring occasionally, until reduced by about half. Taste and adjust the seasonings. 2. Stir in the chicken, asparagus and mushrooms and cook over high heat for 2 minutes. Slowly add the chicken broth and cook another 2-4 minutes. Remove from heat and stir in scallion. Taste and adjust seasonings. Serve immediately. Serves 4. |
