I know this for a fact because as my husband and I travel we have often yearned for a taste of "back home". On occasion we find a transplanted Chicagoan who has opened a restaurant and has these wonderful sandwiches on the menu. I have used many recipes over the years to duplicate the taste and have combined the best of these for my families away from home favorite. ITALIAN BEEF - will make enough for 8 6" sandwiches 4 to 5# boneless beef chuck roast 3 C. chicken broth 1 tsp. salt 1/2 tsp. pepper 1 Tbs. rosemary 2 tsp. oregano 1 tsp. seasoned salt 1/2 tsp. garlic powder 2 tsp. fennel seed 1/4 C. chopped onion Place roast in slow cooker (any type of crock pot). Mix spices, etc. with broth and pour over the roast. Cook on low all day (10 to 12 hours) Remove meat from cooker and shred with 2 forks. Strain broth. Return broth and meat to cooker and keep warm until ready to serve. Serve on Italian bread with sweet peppers. Special treats: Top with melted mozzarella cheese and/or use toasted garlic bread |
