Spinach Pita Calzone

Serve with a tomato salad and you have a complete meal.

1 container (15 ounces) part-skim ricotta
8 ounces shredded part-skim mozzarella
4 ounces Virginia ham, chopped
1/4 cup grated Parmesan cheese
1 package (10 ounces), frozen chopped spinach, defrosted and squeezed dry
6 large (2 ounces each) pita breads, plain or whole wheat
2 teaspoons olive oil

1. Preheat oven to hot(400*). Spray cookie sheet with nonstick vegetable cooking spray.

2. Combine ricotta, mozzarella, ham, Parmesan cheese and spinach in large bowl.

3. Cut 1 inch from top of each pita. Spoon cheese mixture into each pita, dividing evenly. Place pitas on prepared cookie sheet. Brush tops with oil.

4. Bake in preheated hot oven (400*) for 10 minutes or until heated through. Serve immediately.
