So many requests for this recipe - so little time!

Whenever I make Pudding Éclair, I get several requests for the recipe. I have decided to post it here at Epinions so that everyone can take advantage of a great summer desert. Pudding Éclair is a great desert for those hot summer days or nights. It blends a wonderful soft pastry puff crust with the flavors of pudding, whip cream, and chocolate. I guarantee this desert will not last through one day. I usually tell people it is an old family recipe, but really, I got this from my sister-in-law, who got it from a book. This is easy to make and uses very few ingredients.

Pudding Éclair:
Crust:
1 c. water
1 c. flour
1/2 c (1 stick) butter or margarine
4 eggs
Topping:
3 c cold milk
8 oz. cream cheese softened
2 (3-oz. each) packages instant pudding (French vanilla flavor if available or regular vanilla)
8 oz. cool whip
Chocolate Syrup
Preheat oven to 350. Use a jellyroll pan or cookie sheet with low sides (15X10-inch). Grease well with shortening.

Cream Puff Crust: Combine water and butter in saucepan and bring to hard boil with all butter melted. Drop in flour and stir vigorously with a wooden spoon. Remove from heat and let cool for a few minutes. Add eggs, 1 at a time, beating with spoon until smooth. At first the egg will look like it is not blending into the flour, but keep mixing as egg will eventually beat in. Spread onto cookie sheet and up the sides. Bake 30 minutes and cool completely.
When crust has cooled, prepare pudding according to package directions, but using only 3 cups milk. Beat with mixer until thick. In separate, larger bowl, beat cream cheese until smooth. Then add pudding a little at a time. Continue blending until smooth and mixed well. Spread over crust and chill.
Just prior to serving, spread Cool Whip over entire pan. Drizzle chocolate syrup over pan. Cut into squares and serve.

Keep this recipe on hand. I know once you try it you will fall in love with this wonderful desert. You will also have all your friends begging for the recipe.
