Spinach Bake

This dish can be made the night before and is a one-dish meal. There are no measurements, no exacts. Only one catch...you have to like SPINACH!!!

1 - 1 1/2 lbs. ground beef or a combination of ground beef, pork, and veal; garlic salt; 1/2 a medium sized onion chopped; mushrooms sliced (or none at all if you prefer); about 10 oz. of frozen spinach, thawed; 2 - 3 eggs depending on how "loose" you like your casserole; about a 1/4 cup of parmesan cheese; 4 - 8 oz. feta (crumbled) (amount depends on how strong a feta flavor you would like)

Sprinkle the meat with garlic salt to taste and brown the meat, onions, and mushrooms. Drain the fat and set aside. Mix together all remaining ingredients and half of the crumbled feta. Stir in the drained meat, onions, and mushrooms. Put the mixture in a casserole dish, sprinkle with remaining crumbled feta, and bake at 350 degrees for 30 minutes.

This dish makes for good leftovers, too!
