What is egg separating, and why would anyone want to do it? Well, the humble egg that is used so much in our everyday cooking has a split personality. On the one hand, the egg white is loaded with healthy protein, and can be used minus the yolk to create fluffy dishes, like meringues. On the other hand, the yolk is loaded with unhealthy fat and cholesterol, and by itself can be used in making mayonnaise and rich pastries and desserts. I've tried this and have often nicked the yolk with the sharp edge of the shell, wasting the egg and defeating my goal in the process. Another way is to use your hands--I've seen chefs on the Food Network break eggs into their hands and let the white leak through their fingers into a container, but I wouldn't recommend this method. Eggs should be handled carefully because of the threat of salmonella, so using the hands creates an unnecessary health risk, and it can be messy to boot.
