I am typically a fan of Amy's Organic Soups - the varieties I have tried have always been flavorful and satisfying. Not so with Amy's Organic Tuscan Bean & Rice Soup. I was very disappointed with this one however. I noticed that as I was warming it up, it didn't have much aroma. At the first spoonful, I was shocked. The texture was like little balls of I don't know what - tapioca was what it felt like, yet I knew it was the rice. A medium grain would have been much better suited for this soup. There was a substantial appearance of beans and vegetables, although the spinach, while listed as the second of the vegetables in the ingredient list, seemed virtually non-existant. This did not seem to have any flavor, certainly not in the positive sense - had this not been the only option for my lunch, I would have tossed it in the trash. As it was, I had to just shovel it in & swallow to the extent possible, trying not to offend my taste buds any further. The most disturbing thing is it has 680 mg of salt per serving, which equates to 28% RDA. Do yourself - and your palette - a favor and steer clear of this one.
