Stiff but Succulent

The bottom line is Aqua serves excellent food. The staff is zealously attentive. The wine list is superb, and the sommelier very knowledgeable.
However, the atmosphere is very rigid. Not the actual setting, which is lovely as well as comfortable, but the attitude and air itself is quite stiff, reminiscent of a British state dinner.
After our waitperson described the specials, I decided to order one of them. The waiter returned to tell me that they were out of that particular special. I was thoroughly disappointed, and asked the waiter to offer a solution. He suggested the Salmon Wellington, which I found to be good, but not excellent by any means. The foie gras sauce was bland, and the salmon itself slightly over cooked.
The best dish at Aqua is the Tuna Tartare. Small bite sizes slices of maguro tossed at the table with an amazing sesame sauce will melt in your mouth. Also of note are the Monkfish and the Surf'n'Turf.
I recommend Aqua to people looking for an exquisite seafood based dining experience. Also, wine connoisseurs will love it simply for the wine list, which is actually more like a book.
Reservations are necessary at dinner, and probably for lunch as well.
