Okay, so beggars really cannot be choosers, especially when on a diet such as the Atkins diet. My father has been on this diet for many years (as other Epinions state), and having been convinced to join in about a year and a half ago, I have to say that the hardest part about this diet is giving up the bread. No longer can you just hop to the healthy sandwich shoppe and dive into it...now you have to eat the thing inside out. Hamburgers are a no-no, toast and bagels can no longer be a favorite choice, and continental breakfasts with their donuts, croissants and rolls have to be passed up, if traveling.
I remember(as many other reviewers have recalled) that I was completely amazed and ecstatic when my father showed me the shipment of No-Carb goodies that he ordered off the internet. Chocolate cookie mix, sugar free syrup, and Atkins-brand Bake Mix (the first two are of independent manufacture). I could not believe that Scientists and Nutritionists had actually managed to make a bake flour that could replicate all the things it promised...Pancakes, muffins, rolls, cake...all these things that I had missed for so long. Now I would be able to get a real bread replacement.
Before the Bake mix, my father and I had experimented with Soy flour as a substitute, as many of the atkins recipies have called for. We tried cookies, pancakes, crepes...you name it. Cookies turned into little mis-shapen balls of hard outside and spongy, unpalatable inside. Soy flour is certainly low in carbs, but a poor substitute. Obviously, this "Bake Mix" had been made for the purpose of satiating dieters like me who really wanted the "real thing".
Wrong. It was just the same as Soy Flour, the results were not any different. Pancakes are like little flavorless sponges with a weird aftertaste. Cookies and muffins are little rocks that don't rise and don't taste anything like food. Perhaps, though, this Bake Mix is a little more refined, and I have to say that its spongey texture is perfect for making crepes! Try making some, substituting the Bake Mix or Soy Flour for the real thing, and sprinkle a little bit of cinnamon and equal on it...its DELICIOUS and only like three grams for a few crepes.
So I think the bottom line is...the Bake Mix is just really fancy soy flour anyways, if you want to eat spongey, weird tasting "breads", just save some money and use Soy Flour from the store. But try making some crepes, its delicious. ^_^ OH! Another recommendation. If you would like a Mix thats even better than Bake Mix, I recommend Proformix by Morico Health Products. Its MUCH better. Happy dieting!
