I have been on the Atkins diet for 6 months now, and these syrups are a staple. The have zero calories, zero carbs, and are wonderful for adding flavor to just about anything. During the atkins diet I went from a size 10 to a size 6, lowered my cholestral substantially, and now have more even moods than I ever used to have. At this point, I am simply keeping my weight off. I use these syrups for my weight loss and to keep it off.
For creating ice cream: mix equal portions of water and heavy cream. Add Atkins syrup of choice (my favorite is vanilla) to taste (be generous) Use an ice cream maker & freeze. It ends up being about 1 carb per 2 ounces and is heavenly.
I also use it for: whipped cream (adding vanilla is wonderful), in tea for flavoring, pancake syrup (add some to the pancake batter as well - along with cinnamon), and general baking.
The maple flavor is not as concentrated as I would like -- hence I add it to the pancake batter as well.
