Those of us who have ever baked a cake from a mix are very familiar with the package with the red spoon on it. Betty Crocker, an icon since 1921 and a boon to busy housewives that wanted to have their cake and eat it, too, without being overworked! Long before the boxed cake mix, mothers/housewives had to make every cake from scratch. When Betty Crocker came along they didn't have to slave in the kitchen very long before she had a scrumptious dessert without taking her very long to produce it.

Betty Crocker Super Moist Carrot cake mix is one of our families favorite cakes. Not only is it delicious when made according to the simple directions on the box but adding different ingredients makes it more delicious. I sometimes add cinnamon, raisins and nuts but whether I add any other ingredients I always add cinnamon. Cinnamon just seems to bring out the spicy flavors of the carrot cake. When baking, the cake gives off the most delicious aroma, making your kitchen smell heavenly, like you were baking for the holidays.
Betty Crocker Super Moist Carrot Cake mix comes in a red and yellow box with the famous red spoon on the front. The mix weighs in at 18 ounces and can make just about any shape cake plus cupcakes you want. There is enough mix to make one 13 x 9 inch cake: baking for 29-34 minutes, two eight inch rounds: baking for 29-34 minutes, two nine inch rounds: baking for 24-39 minutes, 24 cupcakes: baking for 17-22 minutes, or a 12 cup bundt cake: baking for 40-45 minutes.
When I make a Betty Crocker Carrot Cake I usually substitute the oil with the same amount of applesauce. The applesauce does the same thing to the mix that the oil does only you are not getting as many calories or amount of fat. The cake I made recently was for our granddaughters 17 birthday and she loves applesauce so it was a given that applesauce was included in the ingredients of the cake.
Ingredients: enriched flour bleached (wheat four, niacin, iron, thiamin, mononitratre, riboflavin, folic acid), sugar, corn syrup, carrot flavored pieces (corn syrup, enriched flour bleached (wheat flour, niacin, iron, thiamin mononitrate, riboflavin, folic acid), corn cereal partially hydrogenated cottonseed and/or soybean oil, carrot powder, colored with (artificial color, yellow 6, red 40), leavening (baking soda, monocalcium phosphate, sodium aluminum phosphate), modified corn starch, partially hydrogenated soybean and /or cottonseed oil, corn starch, contains 1% or less of : salt, propylene clycol mono and diesters of fatty acids, cinnamon, spices, dicalcium phosphate, distilled monoglycerides, sodium stearoyl lactylate, color added. Contains Wheat and may conain milk ingrediens.
Preparing the mix is very simple: Heat oven to 350°, grease botton only of your pan. Beat mix, water, oil and eggs in large bowl on low speed for 30 seconds then beat for two minutes at medium speed scraping bowl occasionally. Pour into prepared pan/s and bake as directed or until toothpick inserted in middle comes out clean. Cool completely before frosting. If you desire it removed from it's pan, cool for 10 minutes before removing from pan.
Nutritional facts: 12 servings per package. 260 calories per serving, 1.5g total fat with 0.5g being saturated fat and 0 trans fat. 270mg of sodium, 25mg potassium, total carbs 35g with sugars being 19 g. There is 1 g of protien.
This cake is moist enough to enjoy without putting icing on it but putting icing on it makes it so much more enjoyable. And....icing makes for a very nice surface on which to write Happy Birthday!
