I am personally very fond of lemon cake, my family is not so much. However even Husband is willing to munch lemon cake when I really want a change from the usual chocolate, yellow or spice mixes I
most often use. Betty Crocker SuperMoist Lemon Cake Mix is one of the specialty mixes I like to use to engender diversity in my cake baking.
While I do not bake nearly so much as I once did during the days when sons were living at I home; I enjoy baking and continue to some cake making. I like to prepare 3 cakes when I'm in the baking
mood, have 3 great baking pans, 9 X 13 pans, gotten from Tupperware® years ago, if I had more I would make more cakes at the same time. When I do bake; I generally bake up three cakes.
One cake is set out for snacking while two go into the freezer for serving later. I enjoy unexpected company, and I like having something delicious at the ready to serve to visitors.
I have found round layer or rectangular cakes can be baked and stored frosted, or unfrosted in freezer. Cake when thawed tastes and appears as fresh baked, and does not last long on the
counter whether sons have been visiting or not.
I favor using a lemony cream cheese frosting, or a lemon juice powder sugar drizzle when making Betty Crocker SuperMoist lemon Cake. I often make my own cream cheese icing and add lemon juice
to taste, on the other hand, I do continue to teach in the classroom and find the Betty Crocker® brand Ready-To-Serve Creamy Cream Cheese is a dandy choice when I do not have time or inclination to prepare from scratch.
As always I am quite pleased that most General Mills products, sold world wide continue to be -Made in the U.S.A. I always prefer to buy items that are made by US citizens on US soil. I continue to
prefer knowing that companies are willing to provide jobs for United States citizens.
I enjoy Betty Crocker SuperMoist lemon cake mix when I need a break from the old tried and true chocolate, or yellow cake. I find the flavor to be robust, lemon and appetizing. I like using Betty
Crocker® SuperMoist® lemon cake mix as the foundation for generating an assortment of cakes, cookies and goodies.

PREPARATION as directed on the box. I use applesauce in place of vegetable oil.
Mix 1-1/4 cups water, 1/3 cup vegetable oil, 3 eggs
1. Heat oven to 350° F. Grease bottom only of 13 x 9 inch pan or bottom and sides of all other pans
(use paper baking cups for cupcakes).
2. Beat cake mix, water, oil and eggs in large bowl on low speed 30 seconds, then on medium speed
2 minutes, scraping bowl occasionally. Pour into pan.
3. Bake as directed below or until toothpick inserted in center comes out clean. Cool 10 minutes
before removing from pan.
Cool completely before frosting.
Bake time: 13 x 9 in. or; Two 8 in. rounds 33-38; Two 9 in. rounds 28-33; 24 Cupcakes (2/3 full) 21-
26; Bundt pan 38-43. Shorten bake time by 2-3 minutes if using dark or nonstick pan.
High altitude (3500 - 6500 ft): Heat oven to 375 350°F.
Do NOT use 8 in. rounds.
Make batter using 1-1/4 cups water, 1 tbsp flour, 2 tbsp oil and 3 eggs.
Bake time: 13 x 9 in. 35-40 min; 9 in. rounds 27-32; bundt 40-45. For cupcakes, use paper baking
cups. Bake 17-20 min. Makes 30 cupcakes.
