Barbecue should be simple. I do a lot (not my husband!) and simpler is better. I once got a free book similar to this from Webvan (dare I say their name?). I ended up selling it on Amazon because it was too complicated.

I'll avoid this one, too!

I wish you could look at this one too. I keep thinking I must be missing something. It's so popular. I was so excited to get the book. Then, I have just not liked it at all. I waited a while to write a review to give it time to grow on me. NOT. I just get jittery every time I even try to look at this book. Life's too short to stress on a book huh? I should sell this one and hope it finds a good home or give it to Good Will.

Nicely done! (Reply to this comment)

Cyndi, apparently the author does not subscribe to the "KISS" principle? :) Too bad!

I agree with Peggy, simple is usually better. One of the marinades I use for most of my grilling is so simple that it begs for some explanation but I can't explain it - it works. But, when people see it and hear it, they won't believe that's all I used. They think I'm lying. I call it my General Purpose marinade because it works on, virtually, everything - fish, chicken, beef, pork, lamb, etc. It is just equal parts soy sauce, orange juice and red wine.

Marinade red meats overnight, if possible, chicken is less - 4 to 6 hrs. and fish/seafood just 2 hrs.

I've had people accuse me of purposely leaving out part of the recipe!

All your tips work out great for me. And, I'm glad you don't have me driving all over town trying to find something that may not even be sold in these parts (-:

Thanks For The Confirmation (Reply to this comment)

I scanned this book at the book store and left it there. You have confirmed my quick impression of it.

Barbecue, by formal definition, is cooking over an open flame. Smoking is not barbecuing. It is a different style altogether.

I love to barbecue and smoke and to eat barbecued and smoked foods. I barbecue when I need something quick but fall back to my favorite smoking technique when I have the time.

We usually do a big feast around Memorial Day for family and friends. It takes two or three days of preparation. Sometimes we theme it around a section of the country, but usually do a little from several areas.

I think I will keep this book off my want list. Thank you.

Larry--see if you can find Peace, Love & Barbecue and give it a glance. I'm pretty sure you'd love it. The focus in on smoking, and the stories are so entertaining. I keep reading it over and over. I loaned it to a friend, and he stayed up half the night reading it and copied a number of favorite stories. He wants to use one of the stories (with permission of course) in a history book he is writing.
