It is getting close to the holiday season where all the wonderful delicious treats are made such as fudge, candy, cookies, pies, and various other confections. I really like a lot of the treats, some are not so good, but one of my least favorites is pumpkin pie but I have a great substitute and that is a sweet potato pie and sweet potato soufflé.

What I usually do is purchase my sweet potatoes and spend the day cooking those so that they can be soft and whipped with the right ingredients. The house smells great when the sweet potatoes are cooking, but it take such a long time to get enough of the potatoes to make all of this. Then I went to the drained canned potatoes and that does so much better and I don't spend the whole day in the kitchen baking.
One day while shopping I found what I thought was a miracle in a can, Bruce's Sweet Potato Pie Filling. I us their regular sweet potatoes for candied sweet potatoes, you know the ones, just add brown sugar, butter and marshmallows and they are quite tasty because I thought you had to cook fresh ones to make this dish.
Now that I have discovered Bruce's Sweet Potato Pie Filling, all you do is add eggs and evaporated milk, mix well and pour into your sweet dough pie shell, bake until filling is set, cool and serve with whipped cream. Nothing is better.
The Bruce's Sweet Potato Pie Filling isn't as smooth as I like so I use a stick blender to incorporate the eggs and milk. It also needs a little more cinnamon for my taste. Once you have blended this well, you are ready to go. If you are making the soufflé you won't need extra sugar because the topping is a praline topping and that has plenty of sugar in it.
A ½ cup of the filling has 140 calories and no fat. I don't know how you would figure this when it is a pie or a soufflé.
The taste is good, better when whipped till smooth and the pies and soufflés come out creamy and good. You have a house that smells like the holidays. Too bad there isn't an air freshener that smells like this. They have all kinds of fresheners out that are supposed to smell like food, but nothing comes close to this.
The pies are eaten as fast as I can cut them. The soufflé dish is so clean that you would think it came out of the dishwasher.
The Bruce's Sweet Potato Pie Filling is a great alternative to fresh sweet potatoes, but there are times when it can't be found so I used their canned regular sweet potatoes for my pies and soufflés. I would make mini pies for friends and family and give them for small gifts.
If you can find the Bruce's Sweet Potato Pie Filling give it a try for your sweet potato dishes, it is smooth and tastes great. It will leave you wanting more. Now I want a pie.
