PROPER PANNING FOR THE HOLIDAYS

Pros: Heavy duty - even baking
Cons: A bit hard to store if you have limited space - expensive
The Bottom Line: It is durable, and serves it's purpose beautifully, I think it would make excellent Christmas gifts, even for experienced cooks.

When Judith and I decided to share our households, I left most of my baking ware behind. So did my daughter, although since I knew she had a bread machine, I left mine in Cleveland. Neither of us took our loaf pans with us.
So how do you make a meat loaf (which I consider one of my specialties)? How can you make quick breads without a loaf pan? Again Judith had to go to the store - this time to purchase loaf pans. Two Calphalon pans are what she came home with.
I nearly freaked out when I saw the price. "Almost $18 each?" I squealed. "Are you out of your mind?" I had never had a loaf pan before that cost more than $4.98, and I considered that expensive.
Then I looked over the pans, and my squeal turned into a mutter. After using the pans for awhile, I had to give the pans the praise they deserve.
They are non-stick and are warranted to remain non-stick. This is backed up with a life time guarantee. They are heavier than any loaf pan I had used before, and it turns out that is a definite plus. Jude tells me she could have gotten four mini loaf pans but "decided against it, knowing you, Mom".
They have a very sturdy looking rolled edge which should keep denting to a minimum. We have used them for almost four years now, and they are still in good condition. I don't like the care I need to take in storing them. I used to toss my old pans anywhere - and who cared? But these expensive babies have to be stacked with a paper towel between them. If I happen to have run out of towels at the time of the baking, I leave them out until I get some. I don't want to do anything to mar the non-stick surface of these expensive pans.
The holiday recipe I am about to share with you came from my daughter-in-law, Leigh Ann, who lives in Knoxville, Tn.
Leigh Ann is an awesome cook. She cooks the way she does everything else - beautifully and efficiently. Now don't hate her for that. She is as sweet as she is efficient. You can trust me on that. If I say it, it's GOT to be true. I'm her mother-in-law for gosh sake. I am trying to get her started on writing Epinions - but she has problems defining categories. I know she would be a big help to all of us as well as prospective customers. To you, Leigh Ann, and thanks for the recipe.
PUMPKIN SPICE BREAD
3-1/2 CUPS SELF-RISING FLOUR
2 TABLESPOONS PUMPKIN PIE SPICE
2-1/2 CUPS WHITE SUGAR
1/2 CUP PACKED BROWN SUGAR
1 CUP CANOLA (or any vegetable oil)
4 LARGE EGGS, LIGHTLY BEATEN
1 CAN PUMPKIN
Preheat oven to 350 degrees. Lightly spray 2 loaf pans with non-stick cooking spray and dust with flour. ( If you have Calphalon loaf pans it won't be absolutely necessary to oil the pan.) In a large bowl mix together flour and all of the spices. In a separate bowl, combine sugars, oil and eggs, stirring until well blended. Add pumpkin to egg mixture; blend well, and then combine with flour mixture. Pour into prepared pans. Bake 55 minutes, or until toothpick inserted in center comes out clean. Cool in pans for fifteen minutes, then remove to cool on wire rack. Makes two loaves.
Leigh Ann says this is good sliced thin, and made into sandwiches with a light cream-cheese spread. Sounds good to me. I plan to bake a couple of loaves this weekend. I will try to have it on hand during the holiday season when people are apt to drop in. The sandwiches served with a cup of chicken dumpling soup, and chilled sliced peaches would make a decent lunch for them, I think.
