Pros: Perfect size and price for the back yard smoker. Lots of cooking area.
Cons: Low ceiling, no covers avail.
The Bottom Line: Unless you have the money and equipment to weld your own custom smoker, this one isn't too bad

| jlundquist1's Full Review: Char-Broil 04201100 Charcoal Smoker |
We recieved one of these a few years ago as a gift. I've been trying ever since to perfect my smoking ability. I'm originally a full blooded yankee, and not a native to barbeque. I'm not a huge fan of it, but I just love grilling things! I got this smoker as a birthday gift and have been experimenting with it ever since.
I'll be honest, I don't know what makes a "good smoker". Quite frankly I think it's the operator more than the equipment. I do think that this is a very versatile unit. I usually use briquettes to heat my smoker, although I originally only used cut mesquite. I find both work about the same. This unit has plenty of cooking area. The grill height can't be changed, which is no problem if you're smoking, but tricky if you're grilling. It's also tough to cook large(r) poultry that you stand, like beer can chicken, because of the low "ceiling".
I'd recommend anyone get an oven thermometer since there is no temp gauge in the lid. I find that using a seperate one actually works better since the temp on the lid is not the same as the temp on the grilling surface. I've heard that 250-300 degrees is right for smoking a brisket. I've smoked about 10 or so. I've found that you can control the temp easily by manipulating the vent on the fire box. I will say that I haven't been excited about any of the briskets that I've cooked so far. However, from constant checking I know that this unit keeps a good temp/fire going that can be controlled. What else can you need? Like I said, I think smoking is an art, and I'm no artist yet.
This unit makes a pretty good charcoal grill, although like I said, you can't change the grill height.
